Spoiler-light answer: The sources reviewed do not identify a branching finale choice in the original Dying Light campaign. The different endings players commonly mean are in Dying Light: The Following, its story expansion: two outcomes come from a final choice, and a third is a separate hidden ending. The expansion requires the base game.

Which version of “Dying Light 1” do you mean?
“Dying Light 1” can mean the original campaign or the first game together with its story expansion. Those are distinct story scopes: Techland describes The Following as an additional story chapter, and its support page says the base game is required to play it. Techland’s game page
So the answer depends on what you count: the original campaign is not identified in the sources as having a branching finale, while The Following has two finale choices plus a separately triggered hidden outcome.
What are the two choices in The Following’s finale?
At the final conversation with the Mother, Crane can accept her sacrifice plan or refuse it. A February 2016 Gamepressure walkthrough describes the two routes this way: Gamepressure’s ending guide.

Is there a third ending?
Yes. The Following also has a hidden ending that is separate from the two choices at the finale. Gamepressure’s February 2016 walkthrough says it is triggered by collecting the relevant access items and arming a nuclear warhead in a military trailer. This is why players give different counts: “two endings” usually means the two outcomes of the expansion’s final conversation; “three” includes the independently triggered hidden outcome.

Does one ending count as canon?
Techland franchise director Tymon Smektała described Crane’s fate at the end of The Following as him becoming “half-survivor, half-monster” in an interview reported by the Epic Games Store. That comment gives context to Crane’s transformation, but it does not establish one of the expansion’s outcomes as the sole canonical ending. Epic Games Store interview with Tymon Smektała
