What happens to outdoor Ancient Fruit in winter?
Ancient Fruit’s outdoor growing seasons are spring, summer, and fall, so winter is outside its growing season. The Stardew Valley Wiki lists the crop’s seasons but does not specify the precise transition behavior of an already-planted crop; it is safest to plan around winter as a pause in outdoor production rather than assume it will continue growing.

Does the fruit’s value change the winter mechanic?
No. The Stardew Valley Wiki lists a base sale price of 550g for Ancient Fruit, 1,650g for Ancient Fruit wine, and 1,150g for Ancient Fruit jelly, before applicable profession bonuses. These are listed values, not a change to where the crop can grow. (Stardew Valley Wiki: Ancient Fruit.)
