If you do not want to fight the dragon, dying is the usual way out—but you may lose the items you are carrying.
Your options in standard Survival

Why the End gateway will not take you home
End gateways connect the main End island with the outer islands. A gateway on an outer island returns you to the main island; it is not an exit to the Overworld. You can travel through a gateway using an ender pearl or a crawling technique, but that only changes where you are in the End. Minecraft Wiki: End gateway

Leaving through the central exit portal
The central exit portal activates when the Ender Dragon is defeated. Entering it then returns you to the Overworld. If you want to leave alive in standard Survival, this is the normal route. Minecraft Wiki: Exit portal
If you choose to die instead
Death is the ordinary alternative when you will not defeat the dragon. Before relying on it, consider whether your world has keepInventory enabled: without that protection, you can lose carried items. The exact result also depends on the circumstances of your death. Minecraft Wiki: Death

When the answer may be different
This answer applies to ordinary, unmodified Survival. Creative mode, commands, mods, custom server rules, and edition or version differences may change what is possible; there is no general workaround established here for those setups. For specific steps, identify whether you play Java or Bedrock, your game version, and which commands, mods, gamerules, or server restrictions are active.
