Sunflower: What It Is, How It Grows, and Why It Matters

Common sunflower is a North American annual grown for seeds, oil, and flowers. Learn how its flowerhead works and what to consider when choosing a cultivar.

Common sunflower (Helianthus annuus) is a North American annual grown for edible seeds, oil, and ornamental blooms. What looks like one large flower is actually a head made of many small flowers—and the best sunflower to plant depends on whether you want seeds, flowers, or a resource for wildlife.

What is a sunflower?

“Sunflower” can refer to the genus Helianthus, which includes multiple annual and perennial species, or to the familiar common sunflower, Helianthus annuus. The common sunflower is an erect plant with coarse hairs and broad, toothed leaves. It is native to North America and is now widely cultivated for seeds, oil, and ornamental use. Not every plant called a sunflower shares the same growing habit: the genus also includes perennial garden plants. Facts about the crop and its edible seeds in this article refer to the common sunflower unless otherwise noted.

How does a sunflower make so many seeds?

The large, familiar “flower” is a composite flowerhead, also called a pseudanthium. Its outer yellow ray flowers frame a central disk containing many small disk flowers. Those disk flowers are fertile and develop into dry fruits called achenes, commonly known as sunflower seeds. An achene’s color can vary. (Royal Botanic Gardens, Kew)

This structure explains why a single head can produce many seeds: each central disk flower can develop into an individual achene.

What are sunflowers used for?

Common sunflower is grown for edible seeds and oil, as well as for ornamental blooms. Seeds may be eaten raw or roasted, cooked, dried, or ground; they are also processed into oil. Sunflower butter is another food use, while processing byproducts can be used as livestock feed. Some sunflower oils also have industrial uses. (USDA NRCS, Annual Sunflower plant guide)

Seed and oil cultivars are not interchangeable by default. If you are choosing plants to grow, check that the variety is intended for your purpose rather than assuming every sunflower produces the kind of seed you want to eat or press.

Kew reports that sunflower seeds can contain “up to 46%” polyunsaturated oil and “up to 20%” protein. These are upper figures reported on Kew’s species profile, not guaranteed values for every cultivar, serving, or retail product. (Royal Botanic Gardens, Kew)

How do you choose and grow sunflowers?

Start by deciding what you want from the planting. A variety suited to edible seed may not be the right choice for cut flowers or a wildlife planting. Compare intended use, local suitability, mature height, and whether a tall plant with a large bloom may need support.

  • Edible seed: Look for a variety identified for confectionery or edible seed.
  • Oil: Choose an oilseed cultivar rather than assuming a snack-seed variety is equivalent.
  • Ornamental blooms: Consider the mature height and flower form, especially if growing plants for cutting.
  • Pollinators and wildlife: Check whether the cultivar produces pollen and consider local guidance on suitable plantings.

For common sunflower, North Carolina State Extension recommends full sun and sowing after the last frost in spring. That is regional guidance, not a universal calendar: use the frost-date information and growing advice for your location. Sunflowers can be grown for flowers, cut stems, food, and ecological benefits; young seedlings can also be grown as microgreens. Do sunflowers help pollinators and wildlife?

Sunflower flowers can provide nectar and pollen for native and managed bees, butterflies, and other beneficial insects. But the value depends on the cultivar and planting context: Oregon State Extension notes that some sunflowers are pollenless and may not feed pollinators. If pollinator support is a goal, check the cultivar description rather than relying on the plant name alone. (Oregon State University Extension)

Seeds can also provide food for birds and other wildlife. USDA NRCS’s 2024 Southern Plains guide notes that many native bee species in that region are sunflower specialists and that butterflies nectar on the plant. Those observations are specific to the guide’s region and should not be treated as a claim about every location or cultivar.
