They are worth 100 to 5,000 points, depending on the symbol. Three are not fruit at all: Galaxian is a spaceship, and the bell and key are bonus symbols.
Pac-Man fruit list and point values
The following order, level ranges, and scores are documented for the original arcade game. “Fruit” is familiar shorthand for the whole sequence, though the last three symbols are not fruit.

The scores and level ranges come from Jamey Pittman’s Game Developer feature on Pac-Man. It calls the 500-point symbol a peach and the 1,000-point symbol grapes.
When bonus symbols appear
In the original arcade game, a bonus symbol appears twice during a round: after Pac-Man eats 70 dots and again after 170 dots. Each appearance lasts approximately nine to ten seconds before the symbol disappears, according to Jamey Pittman’s Game Developer feature.

Bandai Namco’s help for Arcade Game Series: PAC-MAN, described as a faithful recreation of the original, confirms the general mechanic: fruit appears after a certain number of Pac-Dots and awards bonus points. That help page does not state the exact dot thresholds.
Why are a spaceship, bell, and key called fruit?
Players commonly use “fruit” to mean the bonus object in Pac-Man, but the name does not accurately describe every symbol. Pac-Man Museum’s terminology history notes that original instruction cards did not officially classify the bonus items as fruits. The familiar label stuck, even though the sequence includes Galaxian, a bell, and a key.

Does this list apply to every Pac-Man game?
No. The table describes the original arcade game, not every port or later Pac-Man release. Names, symbols, scores, and appearance rules can vary by version. Bandai Namco describes its Arcade Game Series edition as a faithful recreation, but that does not establish that every other edition uses the original arcade details.
