Breaking more Demon or Crimson Altars in Terraria generates more Hardmode ore, but each altar after the first three adds a smaller return. Every break also spawns one or two Wraiths. On Desktop 1.4.4 and later, altar destruction no longer randomly converts Stone Blocks into evil or Hallow biomes.
What happens when you break an altar?
Once you have defeated the Wall of Flesh, a hammer with at least 80% hammer power can destroy Demon and Crimson Altars. The Pwnhammer is a typical tool for the job; a hammer below the threshold will not break an altar and instead damages you.
Each altar you destroy has two immediate effects: one or two Wraiths spawn, and the world gains another deposit from its Hardmode ore sequence. The in-game message reports the ore, using the format “Your world has been blessed with <name of ore>!”
How many altars should you break for ore?
The first three altar breaks establish the world’s three early Hardmode ore tiers. Further breaks repeat those selected tiers rather than unlocking new ore types, and the amount of ore generated declines with each additional cycle.

For each tier, the world selects one ore from its pair when an altar is first broken. In the Drunk seed, each new round alternates ore types. The Official Terraria Wiki’s altar reference describes the ore sequence and its version history.
Do altar breaks still spread Corruption, Crimson, or Hallow?
For Desktop Terraria 1.4.4 and later, no: destroying an altar no longer has a chance to convert a random Stone Block into Corruption, Crimson, or Hallow. Older advice claiming each break can cause that random spread describes a historical mechanic, not current Desktop play. The cited version change does not establish identical mechanics for every platform or legacy version, so check the applicable version if you play elsewhere.

Can breaking altars trigger bosses or invasions?
Altar destruction enables the possibility of natural Mechanical Boss spawns and Pirate Invasions, but it does not guarantee that either will happen immediately. Each event has its own conditions; an altar break is not a substitute for meeting them.

Altars remain useful crafting stations. They are used to craft pre-Hardmode boss-summoning items, the Night’s Edge, the Void Bag, and the Void Vault. If you want convenient access to altar crafting, keep one rather than breaking every altar. The wiki also notes that an altar item can drop from the Eye of Cthulhu if no altar remains.

Breaking additional altars is a trade-off: it gives another, smaller ore deposit and brings an unavoidable Wraith encounter, while keeping one preserves a handy crafting station. There is no universally optimal number; choose based on whether you value the extra ore or altar access more.
