For most Dexterity-focused melee builds in Dark Souls (the original game, including its Remastered edition), stop at 40 Dexterity for efficient weapon-scaling returns. That is a soft cap, not a hard maximum: gains become much smaller rather than stopping altogether. Consider 45 Dexterity if faster spell casting is a meaningful part of your build.
Why 40 Dexterity is the usual stopping point
The community-maintained Dark Souls Wiki’s Dexterity reference describes a sharp drop in scaling returns after 40 for weapons on the Normal, Raw, Crystal, and unique upgrade paths. That makes 40 a practical target for many melee builds, not a promise that every weapon gains the same amount of damage per point.

Dexterity above 40 can still contribute to weapon damage. The key is efficiency: those levels usually compete with other needs in your build while adding less scaling than earlier investment. The sources do not establish a per-level damage increase for every weapon, so check the specific weapon and upgrade path you use rather than expecting a fixed gain.
When 45 Dexterity can make sense
Dexterity also affects spell-casting speed, but the benefit depends on the spell’s casting animation. The same Dexterity reference reports starting points ranging from 27 for slow sorceries to 43 for fast sorceries, with casting-duration reductions continuing up to 45 Dexterity.

If your character frequently casts and faster spell animations matter to you, 45 can be a worthwhile goal. For a melee-focused character that only casts occasionally, those extra levels may be better spent elsewhere. The relevant trade-off is your own build’s priorities; the reference does not prescribe a universal level distribution.
How your weapon’s upgrade path changes the answer
The 40 target is not equally applicable to every path. The reference gives a later scaling threshold of 50 for Magic, Divine, Enchanted, and Occult weapons. If you use one of these paths, do not assume that the ordinary 40-Dexterity rule captures its scaling breakpoint.
