Several Genshin Impact characters are described in official HoYoverse material as something other than human: a puppet, a robot, a fae-born changeling, a Water Imp, an adeptus, and an Archon. The examples below are the ones whose official wording is clearest. They are not a complete roster, because the official pages checked for this article do not provide a full census of nonhuman or partly nonhuman playable characters.
The characters with clear official descriptions
The clearest examples are Wanderer, Ineffa, Jahoda, Vodyanitsa, Sea Gazer, and Mavuika. Each one is tied to a specific official source, and the table shows what that source actually says.

What each official description establishes
Wanderer: puppet
HoYoverse’s Sumeru character page describes Wanderer in puppet terms, which places Wanderer in the artificial category. The description is about what Wanderer is in the lore; it does not, in the cited wording, go further into how Wanderer came to be.
Ineffa: robot
The official Snezhnaya character page is the most direct on this point. It calls Ineffa a robot constructed from mechanical components, so Ineffa is explicitly artificial rather than merely described with metaphor.

Jahoda: fae-born, raised among humans
Jahoda is the clearest example of a character who sits between categories. The Snezhnaya character page describes her as “a changeling, born of the fae but raised among humans.” That wording makes her fae-born by origin, while her upbringing is human. She is therefore a useful case for readers who assume that a nonhuman origin means a nonhuman life.
Vodyanitsa: Water Imp
The Snezhnaya character page describes Vodyanitsa as “a Water Imp who has parted from her kin.” This places her in the water-spirit category. The description implies a community she has left, but the cited wording does not say more about that community.

Sea Gazer: adeptus
HoYoverse’s Perilous Trail story text refers to “the adeptus Sea Gazer.” Adeptus is the term the game uses for beings of divine rank, so this is the source that classifies Sea Gazer in that group. It is a story-text reference rather than a character profile, and it does not describe Sea Gazer’s physical nature.
Mavuika: Archon
The official Natlan character page identifies Mavuika as Natlan’s Archon and leader. This places her among the divine beings of the setting. The page does not state a biological species, so the accurate claim is that she is a divine figure in Natlan’s lore, not that the game labels her as a specific nonhuman species.

Why “not human” is not one category
The question sounds like a single biological label, but the official descriptions use several different kinds of identity. A puppet, a robot, a changeling, a Water Imp, an adeptus, and an Archon are not members of one species, and they should not be compared as though they were. The useful comparison is by origin or nature: whether the character is artificial, fae-born, a spirit, adeptal, or an Archon, and whether the official description also mentions a human connection, as Jahoda’s does.
Several things do not establish nonhuman ancestry on their own. Unusual appearance, elemental abilities, and an association with a particular region are common across the cast, and none of them is a classification in the official wording. A character should be treated as nonhuman only when an official description says so.
Limits of this list
The six characters above are examples that official descriptions support. The official pages checked here do not provide a shared definition that settles every mixed-heritage case, and they do not list every character who might be considered nonhuman. Genshin Impact adds characters and story details over time, and classifications can be clarified in later official material. For that reason, any complete roster should be checked against current HoYoverse character pages and story text rather than treated as settled.
