A successful parry avoids that hit and can stun a regular human enemy, but it does not reliably stagger every enemy or stop follow-up attacks.
How to parry an attack

Use a valid melee weapon and face the enemy.

Watch for the enemy to begin a melee attack. Tap the control your game currently assigns to block just before the hit lands.

Account for the parry animation’s start-up: react to the attack rather than waiting until the blow visibly connects.
The timing advice comes from a community-authored Steam combat guide posted June 16, 2023, not official frame data. It gives no exact, universal timing window. Endnight Games’ official Patch 01 announcement separately confirms that attack, block, and parry actions exist: it lists a Tactical Axe transition bug that could prevent them from activating.

What a parry does—and does not do
A successful parry avoids the incoming melee hit. The guide says regular human enemies can be stunned, but other enemies are not necessarily staggered. A multi-hit attack may continue after its first blow, so do not assume one parry has ended the threat.

A mistimed parry can leave you exposed. If you are unsure of the timing, holding block is the more sustained defensive option, with its stamina and weapon-effectiveness trade-offs.

You cannot cancel an ongoing weapon swing into defense. The guide says an attack already in progress cannot be interrupted to block or parry.

Block does not cover every danger. The guide cautions that blocking does not prevent fire or knockdown effects.
Which control should you use?
The evidence does not establish a current keyboard, mouse, or controller binding for every platform. Use the block control assigned in your game; check the in-game controls screen for the button or key on your platform. The mechanic details above come from a community guide posted in 2023, while the official patch note confirms the actions existed at that time; neither source establishes that timing or bindings are unchanged in every later build.
