Focus Sash is usually the better choice when a Pokémon at full HP needs to survive one otherwise-fatal hit: it reliably leaves the holder with 1 HP. Focus Band can also leave a holder with 1 HP, including after it has taken damage, but its activation is chance-based. The best choice depends on whether you need dependable protection or are willing to gamble.
How Focus Sash and Focus Band differ

When to choose Focus Sash
Choose Focus Sash when your plan depends on a Pokémon surviving one lethal hit from full HP. That can let a fragile attacker get an important move off or give a lead the turn it needs to set up. Once the holder is no longer at full HP, the Sash’s activation condition is no longer met.
The Pokémon Company illustrated this use with Lycanroc: Focus Sash could help it use Stealth Rock or survive an attack and retaliate with Counter. That is a tactical example from a Sun and Moon-era strategy article, not evidence that the same set is optimal in current formats: Pokémon’s Lycanroc strategy.

When Focus Band might make sense
Focus Band’s distinguishing feature is that it may save a holder even after it has taken damage. That makes it a possible gamble when the Sash’s full-HP requirement is a problem and a lucky survival would matter. It is not a dependable replacement for Focus Sash: the holder can still be knocked out when the Band does not activate.
Bulbapedia reports an activation chance of about 10% in Generations III onward and about 12% (30/256) in Generation II. These are generation-specific figures from Bulbapedia, not figures published by The Pokémon Company. See its Focus Band entry for the mechanics summary.

Check the game and generation
Focus Sash’s multistrike behavior is one important generation-specific detail: from Generation V onward, it protects against only the first strike of a multistrike move. Scarlet and Violet’s item description also characterizes the effect as occurring only once. Consult the rules for your game rather than assuming every generation handles the item identically; Bulbapedia’s Focus Sash entry summarizes the distinctions.
Do not carry the core-series Focus Band rules over to Pokémon UNITE. Focus Band has a separate recovery-style effect there, rather than the core-series chance to endure a knockout hit: Pokémon UNITE held items.
