Once claimed successfully, a free game remains in your Epic library after the promotion ends, according to Epic’s store FAQ. You do not need to keep playing or install it during the claim window.

No. Nintendo lists a separate digital edition of Stranded Deep for Switch, released August 31, 2021. That is a Nintendo storefront edition; buying or claiming it there does not grant an Epic Games Store license.
