A historical freezing pot was a covered vessel that held ice-cream mixture while sitting inside a larger tub packed with ice and salt. The maker turned the pot and periodically scraped the partly frozen mixture from its sides. The phrase can also refer to vessels inside modern commercial freezing machines, so context matters.
How the historical freezing pot worked
The pot held the dessert mixture; it was not the outer container for the ice. Historical instructions describe setting the covered vessel in a larger pail or tub, then packing crushed ice and salt around it. The maker turned or moved the pot as the mixture chilled, opening it at intervals to scrape the frozen layer from the sides back into the center.
That repeated scraping and mixing helped the mixture freeze more evenly instead of setting as a solid lump. This was a manual process: Lucy Dow’s account for Gale describes it as powered by “elbow grease.” These are historical descriptions, not modern food-safety advice or a tested contemporary recipe. What it was made of—and why
In The Italian Confectioner (1820), William Alexis Jarrin recommended pewter. As quoted in the Smith College exhibit, he wrote: “The freezing pot should be always of pewter, because it prevents the contents of the vessel from congealing too quickly, and there is time enough to mix them thoroughly; for on this circumstance … depends the excellence of the ice.” The recommendation reflects Jarrin’s explanation of the method; it is not a present-day cookware or food-safety recommendation. How the method changed
Gale traces the freezing-pot wording to Robert Abbot’s circa-1790 The Housekeeper’s Valuable Present, while also noting earlier specialist vessels in eighteenth-century recipes, including Mary Eales’s 1718 ice-cream instructions. Historical preparations varied: some produced a denser frozen cream than modern ice cream because they did not incorporate air through churning in the modern sense. Gale’s historical account
A later change was the introduction of freezers with internal paddles. The Smith College exhibit dates their use to about 1840. Unlike the earlier arrangement, in which the maker turned the pot and scraped its sides by hand, paddles worked the mixture from inside the freezing vessel. Smith College’s exhibit

What “freezing pot” can mean today
In modern commercial equipment, “freezing pot” may name a vessel inside a machine rather than the historical hand-worked utensil. For example, Innovative Food Systems’ INST21 specification sheet describes two 5-liter pots with independent controls; the sheet’s date is not stated. INST21 specification sheet
If you are looking for a modern hands-on way to make ice cream, a hand-crank ice cream maker is an analogue in function because it involves manual operation. It is not necessarily a reproduction of the historical freezing pot’s vessel-and-ice-bath setup.

How to identify the meaning in context
- Historical recipe or confectionery text: it usually means the covered vessel holding the mixture, set inside a separate ice-and-salt bath.
- Commercial machine specifications: it may mean one of the machine’s freezing vessels, with capacity and controls defined by that model.
