In Pokémon FireRed and LeafGreen, the next destination after defeating Sabrina in Saffron City is Fuchsia City. The route you take depends on where you are in Kanto: travel via Cycling Road from Celadon City, or follow the coast south from Lavender Town.
How to get from Saffron City to Fuchsia City
Fuchsia is the next city in the walkthrough’s progression, but neither listed route starts directly in Saffron. Choose based on your current location:

What happens after Sabrina?
In these games, Team Rocket first takes over Silph Co. in Saffron City. Once Rocket has been driven out, Sabrina’s Gym becomes available. Defeating her earns the Marsh Badge, and the walkthrough then points you toward Fuchsia City.

What comes after Fuchsia City?
Fuchsia is the immediate destination, not the end of the journey. Later in the FireRed and LeafGreen progression, you travel along Routes 19 and 20, cross the Seafoam Islands, and reach Cinnabar Island, where Blaine’s Gym is located. The answer above is for FireRed and LeafGreen. The order of destinations and the conditions for entering Saffron City differ across generations. For example, Bulbapedia’s Saffron City reference describes different access rules in Generations II and IV from those in Generations I, III, and VII.
