Is it better to sell eggs or make mayonnaise?

What does it take to make mayonnaise?
You need a Mayonnaise Machine, whose crafting recipe unlocks at Farming level 2. Craft it with 15 wood, 15 stone, one earth crystal, and one copper bar. Each processing batch takes three in-game hours, so mayonnaise is not an immediate sale option.

Special eggs can make distinct mayonnaise products, produce multiple jars, or be worth keeping for a new animal. The prices below are base values listed on the Stardew Valley Wiki where it gives them; they are not adjusted for professions.

Cooking
Eggs are ingredients in eight recipes: Fried Egg, Omelet, Pancakes, Chocolate Cake, Pink Cake, Cookie, Blueberry Tart, and Crab Cakes. Fried Egg is known from the start of a save; other recipes require their stated unlock source. Chicken, void, and golden eggs are accepted for egg recipes, and duck and ostrich eggs can also be used.

Bundles and quests
Some bundle and quest requirements can call for eggs. For example, the Egg page lists ten eggs for the remixed Home Cook’s Bundle, which applies only when remixed bundles are enabled. Gus’s Special Order requests 24 eggs, and Raccoon requests can ask for five eggs, with some egg types excluded. Reserve eggs when an active request or bundle in your save needs them.
Hatching
An egg can be incubated in the incubator in a Big or Deluxe Coop. If hatching it would add an animal you want—particularly when deciding what to do with a rare first egg—that may be more valuable to your farm than processing or selling it. The choice depends on your current flock and goals.

A quick decision rule
- Check the egg type and size. Ordinary regular eggs, large eggs, and special eggs do not all produce the same mayonnaise or number of jars.
- Check your immediate needs. Keep an egg if a recipe, active bundle, quest, or planned hatch calls for it.
- Check machine access. If you have a Mayonnaise Machine and can wait three in-game hours, processing is the usual straightforward cash choice for ordinary eggs.
- Compare like with like. Use base prices for both raw and processed items, or apply the same profession assumptions to both; do not assume a listed base value is your final sale price.
