What happens when you mine a turtle egg without Silk Touch?
The egg block breaks, but no turtle egg item drops. You can destroy an egg without a tool as well; that still does not let you collect it. The turtle-egg reference on the Minecraft Wiki describes the difference between breaking an egg and recovering it.

How do you collect and move turtle eggs?
Mine the egg with a tool enchanted with Silk Touch. The Silk Touch entry in the Minecraft Wiki enchantment table lists turtle eggs among the blocks that can be collected this way. The cited reference does not require a particular tool material, only the Silk Touch enchantment.
If you are relocating a farm, the Minecraft Wiki turtle-farming guide recommends moving eggs with Silk Touch or building the farm around the eggs’ existing location.

How can you avoid losing eggs?
Living entities can trample turtle eggs, so keep them protected while you work around them. If you do not have a Silk Touch enchanted tool, avoid mining eggs you want to keep; breaking them will destroy them rather than drop an item.
