In Minecraft, a skeleton may drop 0–2 bones. A Looting enchantment can raise the reported maximum: up to 3 with Looting I, 4 with Looting II, or 5 with Looting III. These are possible drops, not guaranteed amounts.
Bone drops by Looting level
A 2025 secondary guide reports the following maximum bone drops for skeletons. It does not provide the probability of receiving each amount.

How certain is this for your version?
The figures above come from a secondary gaming article, not current official Minecraft documentation. The source does not establish whether the same drop rules apply to every game version or to both Java and Bedrock editions, so treat the table as reported behavior rather than a verified guarantee for a particular release.
If you meant a human skeleton
An adult human skeleton is commonly described as having 206 bones, according to the BCcampus Open Textbook’s skeletal-system chapter. That is an anatomy count, not a Minecraft drop amount.
