If you mean a horizontal distance, 256 Minecraft blocks equals 16 chunks: 256 ÷ 16 = 16. A chunk is 16 blocks wide and 16 blocks long, so the conversion applies along either horizontal axis.
How to convert 256 horizontal blocks to chunks
Divide the horizontal distance by 16, because each chunk spans 16 blocks across. For 256 blocks, that is 256 ÷ 16 = 16 chunk-widths. The same calculation works east–west or north–south.
Microsoft’s Minecraft Bedrock guide defines a chunk as 16 blocks wide and 16 blocks long, extending from the bottom to the top of the world.
Does “256 blocks” mean distance, area, or height?
Horizontal distance
A 256-block distance along one horizontal axis covers 16 chunk-widths. This is the usual meaning when asking how many chunks a journey or span covers.

Horizontal area
A 16-by-16-block square contains 256 horizontal block positions and has the footprint of one chunk. A count of 256 blocks alone does not mean one chunk, though: the blocks must occupy that square footprint.
Vertical height
Chunk height varies by dimension in vanilla Minecraft. Microsoft’s guide gives the Overworld a height of 384 blocks, while the Nether and End are 256 blocks high. So 256 blocks of vertical height is the full chunk height in the Nether or End, but not in the Overworld.

A count of individual blocks
If you mean 256 placed blocks rather than a measured distance, the number of chunks depends on where those blocks are arranged. They could fit within one chunk or span several; the count alone is not enough to determine that.
