If you can switch to Creative mode, remove the pumpkin from your armor slot there. In Survival, Curse of Binding locks an equipped pumpkin in place; a carved pumpkin does not wear out, so breaking the item is not a practical way to get it off.
Remove it without dying: switch to Creative mode
Creative mode is the straightforward way to take off a Curse of Binding pumpkin without dying. Once you are in Creative, remove it from the armor slot. Whether you can change modes depends on your permissions and the world or server settings.
What happens if you die?
Death can clear the armor slot, but it is a risky workaround rather than a dependable fix. If keepInventory is enabled, the cursed item stays with you after death. In Hardcore, death ends the run, so do not use it as a removal method if you want to keep that character.
Why the pumpkin will not break
Curse of Binding keeps an equipped item in its armor slot outside Creative mode. The usual exceptions are death or the item breaking, but a carved pumpkin has no durability and will not break from ordinary wear. See the Curse of Binding reference for these mechanics.

Can placing the pumpkin or using a grindstone remove the curse?
Place and break it only after it is unequipped
A cursed pumpkin can have its curse cleared by placing it as a block and breaking it. That does not get it out of your armor slot in the first place: you must first remove it, such as by switching to Creative mode.
A grindstone does not remove curses
A grindstone will not disenchant Curse of Binding. Mojang’s legacy issue tracker records this as “Works As Intended” in its report on curses and grindstones.

Should you try an anvil or a command?
Do not rely on an anvil to remove the pumpkin. The surfaced anvil method was a player suggestion, not documentation of a working mechanic. Commands may offer other possibilities in some worlds, but syntax and availability depend on edition, version, and permissions; no command is provided here as a verified universal fix. In a multiplayer world, ask an operator whether they can switch you to Creative or help with the server’s available options.
