In Red Dead Redemption 2 Story Mode, take a Legendary Animal’s pelt to the Trapper. Take certain separate parts, such as a claw or tooth, to a Fence for possible trinket or talisman crafting.
Where to take a Legendary Animal pelt
Bring the pelt to the Trapper, who uses legendary pelts for clothing and crafting. The GameSpot Legendary Bear guide notes that Pearson and ordinary shopkeepers will not take that pelt.

What to do with claws, teeth, and other parts
A pelt and an animal’s other special part are different items. Certain legendary parts can be taken to a Fence and used to craft trinkets or talismans. Community discussions describe this distinction; see the RDR2.org discussion and Steam Community discussion.
What happens if you lose or cannot skin the pelt
Rockstar Support says that a lost or unskinnable Legendary Animal pelt cannot be sold for in-game cash. The Trapper will still have the materials needed for crafting. This applies to cases such as an animal falling into water or being impossible to skin.

- Leave the Legendary Animal area.
- Allow two in-game days to pass, or follow Rockstar’s manual-save, reboot, and reload procedure to trigger a shopkeeper update.
