Can I downgrade the current Minecraft on Xbox?
No documented option in the Xbox Bedrock app lets you choose an arbitrary older stable release. Mojang’s guidance distinguishes Bedrock, which offers the latest stable version or a beta/preview build, from Java Edition, where players can select release versions in the PC Launcher. That means reinstalling the standard Xbox game is not a documented way to select a previous numbered update. If you need an older release for a specific world, server, or feature, the Xbox app does not provide the Java Launcher’s version-selection control.
Can you play the old Minecraft: Xbox One Edition?
This is different from downgrading current Bedrock. Mojang said existing owners of Minecraft: Xbox One Edition could continue to access and play that old console edition and its minigames, but it would not receive updates after the newer Minecraft release. The official statement does not confirm that the legacy app launches on every current Xbox model. If you already own it, check your library and test it on the console you intend to use rather than assuming compatibility. If you are considering a used disc, confirm that the listing is specifically for Minecraft: Xbox One Edition, and verify compatibility with your exact console before buying. A historical reference to physical copies does not establish current stock, condition, or compatibility of a particular listing.
Does Minecraft Preview let you play an older version?
No. Minecraft Preview is a separate in-development Bedrock build for testing upcoming features on Xbox One and Xbox Series X|S; it is not a way to roll back to a past stable release. Mojang’s Minecraft Preview FAQ

Can you play Minecraft: Xbox 360 Edition on Xbox One or Series X|S?
Minecraft: Xbox 360 Edition is a legacy console edition. The official fact sheet says legacy console editions remain playable but unsupported, receive no further updates, and do not connect to other versions. It does not establish whether this specific title works through backward compatibility on each newer Xbox model. Check the exact game and console before relying on it or buying a copy. Is the old free Bedrock upgrade still available?
No. Mojang’s reminder for eligible Minecraft: Xbox One Edition owners set November 30, 2019 as the deadline to redeem the free Bedrock update. That was a historical offer, not a current upgrade window. Mojang’s 2019 upgrade reminder
