Yes—once you install the Sparrow’s optional missile launcher in GTA Online, it has no reload cooldown, so you can keep firing without running out of missiles during ordinary use. That does not mean there is no interval between shots; the cited reference does not specify an exact firing rate.
How Sparrow missiles work
The missile launcher is an optional vehicle modification, not a default weapon. The GTA Wiki’s Sparrow reference lists the launcher as one of the helicopter’s weapon options and describes its missiles as having no reload cooldown. In practical terms, you do not need to replenish a finite missile reserve after firing.
The same reference distinguishes homing and non-homing missile modes. It does not give a numerical ammunition capacity or an exact delay between shots, so “unlimited” should be understood as no reload cooldown—not as proof that shots have no interval or can be fired simultaneously.
Do you need to buy the missiles?
You need to install the missile launcher modification before the Sparrow can fire missiles. The helicopter does not come armed by default. The launcher is one of two listed weapon options; the other is a minigun.

Which Sparrow does this apply to?
This answer is about the Sparrow in GTA Online, the helicopter associated with the Kosatka Moon Pool—not every vehicle called Sparrow across the Grand Theft Auto series. Rockstar’s Title Update 1.52 notes establish that the Kosatka includes a Moon Pool where players can store the Sparrow. Rockstar’s Title Update 1.61 notes later added Chaff and Flare countermeasures for the Sparrow; those notes do not state a missile count.

The no-reload detail comes from a community-maintained vehicle reference, rather than an official Rockstar weapons specification. Rockstar’s update notes confirm the Sparrow’s in-game context, but do not document its missile ammunition mechanic. The practical answer is therefore that the launcher has no reload cooldown according to the GTA Wiki reference, with no separate capacity or shot-interval figure established there.
