No. Minecraft sources describe Wardens sensing and attacking entities, not eating them. But that does not make an axolotl safe near a Warden: the available references do not establish that Wardens always ignore axolotls.
What “eat” means here
The documented behavior is detection and attack, not consumption. A Warden can be a threat without eating its target, so “the Warden doesn’t eat axolotls” should not be read as “the Warden can’t harm axolotls.” Mojang’s Java snapshot notes describe a ranged attack and changes to the Warden’s anger range while sniffing, both combat and detection mechanics rather than eating (Mojang snapshot 22w15a notes).
Why the Warden may still be dangerous
The Java Edition 1.19 reference describes Wardens as blind, using smell and vibrations to follow or attack players, mobs, and other entities that make vibrations (Minecraft Wiki: Java Edition 1.19). That is a version-specific community reference, not a complete specification of every current Java release or Bedrock behavior. Mojang’s snapshot notes likewise document attacks and detection, not consumption.
Mojang’s official Bedrock sample repository includes a Warden entity configuration, but that implementation reference does not establish an axolotl-specific rule for every Bedrock version (Mojang bedrock-samples). The cited material therefore does not support saying Wardens categorically ignore axolotls, nor does it establish that every encounter plays out identically across editions.

What axolotls do around other mobs
Axolotls have their own combat behavior; they are not simply passive targets. Microsoft’s Bedrock documentation says they are passive toward players but attack hostile mobs, and notes that entities can have behaviors specific to their type (Microsoft Learn: Unique Entity Behaviors).
Mojang’s axolotl overview describes them attacking many aquatic creatures, including drowned, while excluding some others (Minecraft: Mob Menagerie: Axolotl). In Mojang’s Caves & Cliffs article, axolotls attack fish, squid, drowned, and guardians; it also says other mobs cannot target an axolotl while it is playing dead (Minecraft: Caves & Cliffs: Part I Out Today on Bedrock). Playing dead is a temporary defensive state, not proof that axolotls are protected from Wardens in all circumstances.

How to keep an axolotl out of danger
If you want to protect an axolotl, keep it away from a Warden rather than relying on the Warden to ignore it. The cited sources explain Warden detection and attacks and axolotl behaviors, but do not document a universal immunity or guarantee that an axolotl will be safe nearby.
