They explain that Zygarde’s Cores call scattered Cells together when it needs to fight. Its 10%, 50%, and 100% figures describe how many Cells have assembled—not how many Cores it has.
What official sources say about Zygarde’s Cores
The Pokémon Company’s Zygarde 10% Forme page explains: “When Zygarde needs to fight, its Cores call for the Cells scattered across the land to gather, and then Zygarde transforms into this form.” The page uses “Cores” in the plural, but does not state how many there are.

So the most accurate answer is that the cited official material establishes multiple Cores, but not a specific total. Giving an exact count would go beyond what these sources say.
Are Zygarde Cores and Cells the same thing?
No. In the official description, Cores call, while Cells gather. The terms refer to different components in the process, so a number describing gathered Cells is not a count of Cores.

What do Zygarde’s form percentages mean?
The percentages describe the proportion of Zygarde’s Cells gathered into a form. The Pokémon Company’s form pages describe the stages this way:

What Power Construct means in the Pokédex
The Pokémon Company’s Brazilian Portuguese Pokédex entry for Zygarde describes Power Construct as gathering Cells when Zygarde’s HP falls to half or less, changing it into Complete Forme. That is a game-mechanics description of the transformation; it does not specify a total number of Cores.

That is a different question from how many Cores Zygarde has. The cited official form pages explain the approximate share of Cells gathered for each form, but do not give a total Cell count. Neither the form percentages nor the Power Construct description establish a number of Cores.
