It depends on which text you mean. To change how chat looks to you, look for the accessibility setting for chat text style formatting. To color sign text, use the sign customization available in Bedrock Edition. Neither feature is the same as sending a colored chat message that every player sees: Java’s documented chat styling is server-controlled, and Bedrock’s documented chat-prefix option is a beta scripting API feature.
Change how chat text looks to you
Minecraft describes chat text style formatting as an accessibility display option. It can provide text-display choices such as size and color, so it concerns how text appears to the player using the setting—not necessarily how other players see a message.

Open the game’s Accessibility menu and look for Chat text style formatting or the equivalent setting in your edition and version. Minecraft’s accessibility information confirms the feature, but does not give one current menu path for every game and platform; labels and placement may vary. This changes your display, not the color of a message you send to everyone.
Change the color of text on a sign in Bedrock
Minecraft’s Trails & Tales Bedrock update notes say, “Both sides of the Sign can now have separate text and colors, allowing for further customization options.” The notes also say that a placed sign can be edited by interacting with it.

For current controls, follow the prompts shown by your Bedrock game when editing the sign; the update notes establish the feature but do not document a complete step-by-step control sequence for every platform or version. One stated limitation: you cannot use an ink sac, glow ink sac, or dye when the sign text is empty. The notes also say signs with non-text chat components cannot be edited.
Can you send colored chat messages that everyone sees?
Java Edition: styling is server-controlled
Java 1.19’s update notes describe server-controlled chat types. In that context, the entire message can receive formatting, including a specific color. This documents a server-side capability; it does not establish that a player can type a color code into ordinary chat and make the message appear colored to everyone.
Bedrock Edition: a beta scripting API option
The Bedrock 26.20 changelog describes Player.chatMessagePrefix as a beta scripting API property. It can add a prefix to player chat messages and may be used for color or formatting codes. That is a developer/API context, not a general instruction for ordinary players to enter codes directly into chat.
Other technical text displays
Java 1.19.4 release notes document configurable text and background for text_display entities. This is a command- or technical-use feature, distinct from coloring a sign or changing your personal chat display. The release notes do not make it a general player-chat color method.

Choose the right approach
- Your own chat appearance: check Accessibility for chat text style formatting.
- Text on a sign: use Bedrock sign customization; make sure the sign has text before trying an ink sac, glow ink sac, or dye.
- A shared colored chat message: ordinary player-entered color codes are not established by the cited official documentation. The documented Java option is server-controlled; the Bedrock option is a beta scripting API.
- Custom technical display: Java’s
text_displayentity is a separate command-oriented route.
If you are troubleshooting, first identify your edition (Java or Bedrock), the text location (chat or sign), and whether you want a change only on your screen or visible to other players. Those distinctions determine which feature applies.
