In Minecraft Bedrock, drop a reachable item near a zombie and see whether it picks it up; pickup depends on the mob’s eligibility, so this is not guaranteed. To equip one directly, use the Bedrock /replaceitem entity command with the zombie as the target. Java behavior and commands depend on version: an official snapshot documents zombies holding spears, but the cited official sources do not establish a general command for giving a Java zombie any item.
Let a zombie pick up an item
Drop the item close enough for the zombie to reach it. Minecraft’s Bedrock 1.16.0 changelog explains that the pickup goal considers reachable items, and that some monsters’ eligibility can depend on a spawn-time chance calculation involving factors such as time played, difficulty, and moon brightness. Eligibility can be saved on the mob. Whether a picked-up item goes into a hand or equipment slot also depends on the mob’s behavior. The changelog describes component behavior; it does not guarantee that every zombie in every current version will pick up every item. Read the Bedrock 1.16.0 changelog.
Equip a zombie directly in Bedrock
Use /replaceitem entity to replace an entity’s equipment slot. The documented command form is:
/replaceitem entity <target> <slotType> <slotId> <oldItemHandling> <itemName> [amount] [data] [components]

Java Edition depends on the version
Do not assume the Bedrock command syntax works in Java. Mojang’s Java snapshot 25w41a notes that zombies, husks, piglins, and zombified piglins can hold spears, and that zombies can spawn with a spear. That documents a specific snapshot feature, not a way to give a zombie any arbitrary item in every Java release. See the official 25w41a snapshot notes.
If you need a Java command for a particular item, first identify your exact game version and check its command syntax. The official sources cited here do not provide a general Java recipe for arbitrary zombie equipment.

Enable commands and understand the trade-off
Commands require permission. In Bedrock single-player, turn on Allow Cheats in the world’s settings under the Game tab. Mojang says enabling cheats permanently prevents achievements from being unlocked in that world, even if cheats are later turned off. In Java single-player, commands can be enabled when creating a world or later in World Options; on a multiplayer server, you need sufficient permissions. See Mojang’s guide to using commands.
