Choose a demo lesson and start it. You can replay demo lessons without signing in, but you cannot save worlds or use multiplayer in demo mode, according to Minecraft Education support.
What the demo does—and does not—let you do
The demo is a way to try a sample activity, not a way to unlock the complete licensed experience. Its key limits are that worlds cannot be saved and multiplayer is unavailable. If you want to continue a world later or play with others, you will need access through an eligible trial or a license.

How the account-based free trial differs
The free trial is separate from the no-account demo. It requires an eligible Microsoft 365 or Office 365 Education account. A personal Microsoft 365 or Office 365 subscription alone does not qualify for the trial, according to the same official trial guidance.
How to get full access
First, ask your school or organization whether it already has a Minecraft Education license and can provide access. Microsoft 365 account holders can also purchase and use Minecraft Education, with separate routes for educational and commercial organizations described on the official licensing page. Homeschool organizations are directed to the commercial offer on the parents and families page.
