Here, “nata” means nata de coco, a coconut-based gel used in desserts—not Australian NATA accreditation or the Spanish word for dairy cream. Philippine cultural material associates náta especially with Laguna and Quezon, where it is made from coconut water. It is commonly served in syrup with fruit or used in other desserts.
What is nata de coco?
Nata de coco is a gelatinous, cellulosic substance that forms on sugar-enriched liquids or plant materials. An official Konaseema district government description lists coconut water and coconut milk, as well as plant extracts, fruit juice, and other sugar-rich materials, as possible bases. The coconut-water version is the food most often meant by “nata de coco.”
The name can be confusing: the Philippine cultural entry for náta notes that it can also correspond to Spanish crema and, in some contexts, coconut cream. The sources describe related fruit-based gels, including pineapple nata, but those are distinct from the coconut-based ingredient.
How is it made?
Nata forms on a sugar-rich liquid or plant material. Coconut water is a documented base, and the Konaseema district description also names coconut milk and other substrates. Because these sources do not establish one standard recipe, starter organism, fermentation time, or safety procedure, those details should not be assumed to be the same for every product or preparation.

What does “nata” mean outside food?
The bare word is ambiguous. In this article it refers to nata de coco, but “NATA” can also refer to Australia’s accreditation organization, and Spanish nata means a fat-rich dairy product. These are unrelated meanings, not different kinds of coconut gel.
