The Rusty Spoon opened in 2011 and was associated with chef Kathleen Blake. Contemporary coverage described seasonal cooking and relationships with Florida producers. In a 2016 Bon Appétit feature, Edward Jones reported that the restaurant sourced citrus from Uncle Matt’s, greens from an organic grower outside Gainesville, beets and roots from near Orlando, and goat cheese from Fruitland Park. The feature also described an emphasis on seasonal purchasing and mostly underused local fish, while avoiding bottom-trawled seafood.
