There is no single guaranteed outcome if you touch Error Sans. Touch-aversion is commonly attributed to him in fan references, but no universal rule establishes that every contact causes a glitch, attack, or other specific effect. The answer depends on which fan continuity you mean.
Who is Error Sans?
Error Sans is associated with Ask Error!Sans, an Undertale fan project. The project listing names CrayonQueen (Loverofpiggies) as its original author and describes Error as a destroyer of alternate universes. He is not a character from the original Undertale game. Project listing
There are also continuations, roleplay profiles, chatbots, and fan-wiki interpretations. They should not be treated as one definitive canon: a continuation page describes itself as an official continuation made with permission, while chatbot and wiki material offer other interpretations. How does he react to being touched?
A fan wiki lists fear of being touched as one of Error’s traits, and secondary coverage repeats the idea. That supports describing touch-aversion as a commonly attributed trait, not as a universal rule confirmed for every version. The available sources do not establish a definitive cause or a fixed response to contact. Fan wiki Secondary article

Could touching him cause a glitch or an attack?
Some fan portrayals may show contact leading to glitches, strings, or an attack. A secondary article describes those possibilities, but does not establish that they are guaranteed or supported by primary creator evidence. Treat them as version-specific storytelling choices, not what must happen whenever someone touches Error Sans. Secondary article
Claims that a touch always causes death, soul manipulation, timeline destruction, or another particular consequence need a source for the specific continuity. Without one, those claims go beyond what is established.

Which version should you use?
If you are writing a scene, discussing roleplay, or comparing portrayals, name the fan work or profile you mean. Check what that source actually says about touch-aversion and what response it depicts; do not transfer a reaction from one version to all others. The available material does not support a complete, definitive comparison of every Error Sans portrayal. Project listing Chatbot profile Fan wiki
