Choose Processing if you want to transform resources
Processing suits players who would rather refine or convert materials than focus mainly on locating them or producing a final item. Its role is the middle of the chain: turning raw inputs into usable materials for later production.
Choose Crafting if you want to make finished goods
Crafting is the closest fit if your goal is to turn prepared materials into equipment or other finished products. The available overview describes it as the production end of the chain, but does not establish which crafts are currently available or most useful.

Older Ashes of Creation guides do not all present artisan activities in the same way. Ashes 101 says Cooking, Alchemy, and Animal Husbandry moved into Processing in a design update it dates to 2022. That is useful context for why branch charts can differ, but it is not confirmation of their placement in the current build.
A Crafting overview names examples including armor smithing, blacksmithing, carpentry, jewel crafting, scribes, ship building, siege weapons, and weapon smithing, while cautioning that its list may be incomplete. It also expresses uncertainty about whether armor-making would remain combined or be split. These examples should not be treated as a verified current roster.
