They briefly did in snapshot 25w41a, but that change was reversed in 25w42a. For Bedrock Edition, the available documentation does not confirm the skeleton horse’s current behavior.
Do skeleton horses burn in sunlight in Java Edition?
No. The Minecraft Wiki’s community-maintained Skeleton Horse reference states that skeleton horses no longer burn in sunlight. Its version history records a temporary change in Java snapshot 25w41a, followed by its removal in 25w42a.

That history matters: an undead classification alone is not enough to determine whether a particular horse catches fire in daylight. The sunlight-burning behavior for skeleton horses was changed separately, and the documented Java behavior is the post-reversion one.

What about Bedrock Edition?
Microsoft’s Bedrock Creator documentation for minecraft:burns_in_daylight describes a general entity component: entities with it take fire damage in direct sunlight. It does not establish that a vanilla Bedrock skeleton horse has that component, so it cannot settle whether skeleton horses burn in the current Bedrock release.

Are skeleton horses different from zombie horses?
Yes. The official Java Edition 1.21.11 release notes say that zombie horses burn in sunlight and that horse armor protects them from sunlight damage. Those statements apply to zombie horses; they do not say that skeleton horses burn.

Microsoft says an entity using minecraft:burns_in_daylight catches fire in direct sunlight unless it is wearing armor in the configured protection slot, standing in water, or in shade. The documentation notes that horse armor can be assigned as a protection slot in relevant entity definitions. These are generic component rules, not confirmation that a vanilla skeleton horse uses the component.
