No. In vanilla Minecraft, a grindstone can remove eligible non-curse enchantments from an item, but it does not return them as an enchanted book. You receive some XP for each enchantment removed; the enchantment itself is lost.
What happens when you disenchant an item?
Minecraft’s Village & Pillage update notes describe the grindstone as able to “remove all non-curse enchantments from an item; for each enchant removed some XP is reimbursed.” That XP reimbursement is not a way to preserve or recover an enchantment. The notes do not describe transferring a removed enchantment to a book.
Non-curse enchantments
Using a grindstone on eligible gear removes its non-curse enchantments. The removed enchantments are gone rather than stored for later use.
Curses
The official update notes specify non-curse enchantments as removable. The Minecraft Wiki’s grindstone reference explicitly says curses cannot be removed by a grindstone.

Can an anvil transfer an item’s enchantment to a book?
No. An anvil can apply an enchanted book to a compatible item or combine compatible enchanted items; it does not extract an enchantment from gear and put it into a book. Microsoft Learn’s anvil mechanics guide describes combining an item with an enchanted book, not reversing that process.
What if you want to keep the enchantment?
Do not use the grindstone on an item whose enchantments you want to keep: vanilla gameplay does not provide an extraction step that saves them as a book. Community suggestions to add book transfer are feature requests, not descriptions of an existing mechanic. For example, this Minecraft Feedback post proposes such a feature and notes that the grindstone does not currently return the enchantment as a book.
