For map travel, Monster Hunter World: Iceborne lets you ride small local creatures with Raider Ride. A community-maintained guide lists Jagras, Kestodon, Shamos, Girros, Gastodon and Wulg. You cannot use a large hunt monster as a mount to travel around the map: mounting one is a temporary combat action, while the Clutch Claw is a separate grappling tool.
Which monsters can you ride for map travel?
Raider Ride is the travel feature in Iceborne. Capcom describes it as a way to follow monster tracks or travel to a destination pinned on the map. Its official feature article names Jagras as an example; the complete six-species roster below comes from a community-maintained guide, not that Capcom article.

Does Raider Ride require Iceborne?
Yes. Capcom presents Raider Ride as an Iceborne feature. The expansion was offered as downloadable content, and Capcom also described a physical disc edition containing both Monster Hunter: World and Iceborne. See Capcom’s Iceborne product information for its release-format description.

How is riding different from mounting a large monster?
Mounting happens during a hunt: the hunter lands on a large monster and attacks it as a combat action. The launch-era fact sheet describes moving around a mounted monster to deal localized damage; it does not describe taking control of that monster as map transportation. So if you mean riding a Great Jagras or another large target from place to place, that is not what the mounting mechanic does.
The official Iceborne feature overview distinguishes its combat features from Raider Ride. Mounting and Raider Ride have different targets and purposes: a large monster in a hunt versus a small local creature used for travel.

What does the Clutch Claw do?
The Clutch Claw is another combat mechanic, not a ride. It grapples onto a monster so the hunter can wound it, influence its direction or bash it into a wall. In a 2019 interview, series producer Ryozo Tsujimoto described firing it from the slinger to grab a monster and wound or redirect it. Read the 2019 interview with Tsujimoto for his explanation.
