The game returns you to the save state from before the final battle, although your save is marked as completed.
What happens after you defeat Ganon?
After the ending, the game loads your pre-final-battle state rather than leaving you in a world where Ganon has been defeated. You can continue exploring from that point and return to the finale to fight again. The Bow of Light is available for the final encounter, but ordinary completion does not add it permanently to Link’s inventory.
The completed marker on your save records that you finished the game; it does not mean the game has saved a post-Ganon version of Hyrule.
Can you keep it with a glitch?
Players have reported glitches that can retain or transfer the Bow of Light. These are exceptions, not a supported post-game feature, and the reports do not establish a procedure that is guaranteed to work across game versions. Treat any such method as version-dependent and separate from normal play.

Does this apply to every Zelda game?
No. This answer is specific to normal play in Breath of the Wild. It should not be taken as a rule for other games in the series, or as confirmation that a reported glitch is an intended mechanic.
