In standard play, death sends the Knight back to the last bench rested at; it does not erase the save or permanently undo broader progress. The main immediate cost is the Geo you were carrying, which your Shade holds until you defeat it. Dying again before recovering that Shade can make its Geo disappear permanently. Steel Soul Mode is the exception: a qualifying death ends the run and resets the save profile.
What happens when you die in standard mode?
Death affects your checkpoint, carried Geo, and SOUL gauge in different ways. The checkpoint remains, but you may need to recover your Shade to restore what you lost.
You return to your last rested bench
Benches save the game. After dying, the Knight returns to the last bench rested at, so the death does not erase progress saved at that checkpoint. See the bench reference.
Your Shade holds the Geo you were carrying
The Shade appears at or near the room where you died and holds the Geo lost in that death. Defeat it to recover that Geo. Until then, your SOUL gauge is broken and limited to 66 charge; defeating the Shade restores the gauge. The death reference and Shade reference describe these mechanics.

What if you die again before recovering the Shade?
A second death replaces the first Shade. The new Shade carries only the Geo collected since the earlier death, so the Geo held by the old Shade is lost. Defeating the new Shade restores the SOUL gauge, but does not bring back the Geo from the first Shade.
That makes the trip back the risky part: if the route is dangerous, consider whether you can safely reach the Shade before carrying more Geo into another attempt. The Shade’s pin appears on the map. Confessor Jiji in Dirtmouth can summon it to her room in exchange for a Rancid Egg, which can help when returning to the death site is difficult; see the Jiji reference.

How is Steel Soul Mode different?
Steel Soul is a permadeath mode. A qualifying death ends the game and resets the save profile, unlike standard play, where the Knight returns to a bench and can continue. The Steel Soul reference says Dream Boss and Godhome deaths do not count as actual deaths; deaths in the White Palace and to the Radiance do count as game overs.
