Use the times as a guide, then watch the fish: the Wiki describes the cooked stage as toasted or golden with white eyes. Remove it then rather than waiting for the burnt stage, when food darkens and produces dark smoke.
Why cook fish before eating or selling it?
The official Sea of Thieves fishing guide, dated 27 February 2020, says cooked fish gives more health and sells for more gold than raw fish; burnt fish sells for much less. It also warns that raw fish can make your pirate vomit. As the guide puts it, “Make sure you cook it, as raw fish will often just make your pirate puke.”

Where to cook your catch
You can cook food in a ship’s pot or over a campfire. The official Hunter’s Call page notes that cooked food can be more effective for healing when consumed.
