The Far Cry Wiki lists Sharky as 37 in Far Cry 5 and reports his birthday as October 2, 1980. Its timeline page says the birthday comes from an in-game wanted poster. These are fan-maintained references, not an official Ubisoft biography.

If the story takes place in 2018, someone born on October 2, 1980 would be 37 until October 1 and turn 38 on October 2. Ubisoft’s official pages reviewed here do not establish the story’s exact calendar date, so 37 is the commonly listed age, while 38 depends on when in the year the events occur.
Does the game’s 2018 release date settle it?
No. Ubisoft’s UK store listing gives Far Cry 5 a release date of March 27, 2018, but a game’s release date is not necessarily its in-world date. Ubisoft’s official game page describes the Hope County setting and Guns for Hire, but does not state Sharky’s age or confirm the story’s precise date.
