In Survival or Adventure, you can’t take off an equipped carved pumpkin with Curse of Binding using ordinary inventory controls. Your practical options are to switch to Creative mode, die in a non-Hardcore world with keepInventory disabled, or use a command only if you have the right permissions and verified syntax for your edition and version.
Why ordinary removal does not work
Curse of Binding prevents an equipped item from being removed from its armor slot. Minecraft Help describes the exceptions as death or the item breaking; Microsoft Learn gives the same core rule. See Minecraft Help’s enchantment guide and Microsoft Learn’s enchantment documentation.
A carved pumpkin has no durability that can run out, so waiting for it to break is not a practical option. A pumpkin or mob head can be placed and broken to remove the curse from the item itself, but that does not detach a pumpkin that is already equipped.
Choose a removal method

Switch to Creative mode
If you can change modes, switch to Creative and remove the pumpkin there. The Minecraft Wiki documents the pumpkin-specific exception for removing a bound pumpkin in Creative. Official Minecraft Help describes Creative as a mode where blocks are instantly destroyed when punched; that general description does not by itself establish the pumpkin-specific behavior. Die in a regular world
Before choosing death, check the world’s keepInventory rule. If it is enabled, you keep the cursed item after death, so death will not remove the pumpkin. If it is disabled in a non-Hardcore world, death is a removal route under the binding rule.
Do not use death as a removal plan in Hardcore if you want to preserve the run: death ends access to the world.

Commands require edition-specific verification
If you have command permissions, use only a command confirmed for your Minecraft edition and version. The historical Mojang bug report about commands affecting pumpkins and skulls records a fix version of 16w44a, but it is not a current Java-versus-Bedrock command guide. It does not establish a safe command recipe for every current version. See the historical Mojang issue.

Methods that will not remove it from your head
- Inventory controls in Survival or Adventure: Curse of Binding blocks ordinary removal once the pumpkin is equipped.
- Waiting for it to break: a carved pumpkin has no durability to deplete.
- Anvil or grindstone: the available reference does not establish either as a way to remove an equipped pumpkin’s curse; the grindstone reference says it does not remove the curse. An anvil suggestion surfaced in community discussion is not proof of an existing mechanic.
- Placing and breaking a pumpkin: this applies to the item itself when it can be placed, not to detaching one already worn in Survival.
