EA forum guidance also describes Active Household Only as an alternative: Sims in the household you are playing can age, while Sims in other households do not. The exact option wording may vary by platform or game version.
Choose how aging should work
EA forum guidance describes two useful choices. Pick the one that matches whether you want aging to continue in the household you are currently playing:

These distinctions come from EA forum guidance, rather than a current official EA walkthrough: EA forum discussion of aging settings.
Turn aging off in Game Options
- Open Game Options.
- Select Gameplay.
- Turn off the aging option to stop Sims from aging. If you want only the currently played household to age, choose Active Household Only instead.
- Apply or confirm the change if the game presents that prompt.

- Customize your Sims’ looks and their home with new family fashion and build items. Give the kids’ bedrooms extra personality, remodel the kitchen to feel homier, and let your Sims express their sporty or artistic sides with new outfits.
Stop Neighborhood Stories changes separately
Turning off aging is not the same as disabling Neighborhood Stories. Neighborhood Stories can cause autonomous life changes such as adoption, career changes, moving, pregnancy, and death. If you want to limit those events, review Neighborhood Stories separately; EA says its settings can be configured for My Households, Other Households, or an individual household. The configurations are per-save. See EA’s Neighborhood Stories guide.
Check Animal Aging if you have pets
EA’s July 18, 2023 update specifically names Animal Aging as a separate option: when it is off, animals no longer age up and die. The update does not establish that the general Sim-aging toggle also controls every animal, so check this option separately if that is your goal. Read EA’s July 18, 2023 update.

What to know about versions and unexpected aging
EA’s October 22, 2024 patch notes list PC version 1.110.265.1030, Mac version 1.110.265.1230, and console version 2.01. They include a fix for Sims incorrectly aging up when players adjusted game age options. Those dated notes document a past fix, not the current wording or behavior of every platform’s settings.
