Which Samurai Edge is the infinite-ammo reward?
The unlock is the Samurai Edge (Original Model), a bonus handgun with infinite ammunition. It is not the same as the separate Chris, Jill, or Albert Samurai Edge models. GameWith lists the Chris and Jill models as preorder bonuses and the Albert model as part of the Extra DLC Pack; those are distinct bonuses, not the Standard S-rank reward. What S-rank time do you need?
The time limit depends on whether you play an A or B scenario, not whether you choose Leon or Claire. PowerPyx and GameWith list these Standard-difficulty requirements:

The B-scenario limit is 30 minutes shorter than the A-scenario limit. These requirements are reported by PowerPyx and GameWith.

How to unlock and collect it
- Choose Standard difficulty. Start a Leon or Claire scenario; either character can earn the reward.
- Meet the limit for that scenario. Finish an A scenario in 3:30:00 or less, or a B scenario in 3:00:00 or less, to earn an S rank.
- Collect the reward on a subsequent playthrough. Check an item box for the Samurai Edge (Original Model). PowerPyx reports that the unlock carries across characters and difficulty settings.
Does infinite ammo mean you never reload?
No. Infinite ammunition means the weapon does not run out of reserve ammo, but Shacknews notes that bonus infinite-ammo weapons still need to be manually reloaded after their loaded rounds are fired. Shacknews’ unlockable-weapons guide explains this distinction.
