Yes—Police Simulator: Patrol Officers supports cross-play between PC and Xbox. PlayStation cross-play with PC or Xbox is not confirmed by the official sources cited here, so don’t assume those platforms can join the same co-op session.

Make sure you mean Patrol Officers
There is also a distinct game called Police Simulator. Its official website describes a separate installment, refers to a 2027 release, and says cross-play will be available across its supported platforms, with two-player online co-op. That claim is about the upcoming game, not Police Simulator: Patrol Officers. Official Police Simulator website
Why older answers may say cross-play is unavailable
A developer response on Steam dated November 21, 2022 said that Patrol Officers did not support cross-platform play at that time. The later May 2025 announcement introduced PC–Xbox cross-play, so the old answer should not be treated as the current status for those platforms. 2022 Steam discussion · May 2025 announcement
