Pokémon FireRed and Pokémon LeafGreen each have Pokémon that are exclusive to that version. If a Pokémon is on the list for the other game, you’ll need to trade to get it in your copy. Here’s the full list, including evolved forms.

These are version-exclusive lists, not a complete roster of every Pokémon obtainable in either game through trades or connections with other games. For broader completion context, The Pokémon Company’s overview notes that completing every Pokémon in one game also involves help from Pokémon Ruby and Pokémon Sapphire, as well as Pokémon Stadium.
Which version should you choose?
Choose based on the Pokémon you want to find in that game: FireRed has the species in its list, while LeafGreen has the species in its list. If you want Pokémon exclusive to both versions, arrange a trade with someone playing the other one. Neither list establishes an objectively better version.

Deoxys is a form-specific difference
FireRed’s exclusive is Deoxys (Attack Forme); LeafGreen’s is Deoxys (Defense Forme). The listed difference is the form, so consider which one you’re after when choosing.

Nintendo’s FAQ says the Switch versions support local wireless connections through the Pokémon Wireless Club, where up to four other players can connect to trade, battle, or play a minigame. Online play is unsupported, so a version-exclusive trade requires a local wireless connection rather than online trading. Nintendo also says a Nintendo Switch Online membership is not required to purchase or play the standalone games. Read Nintendo Support’s FireRed and LeafGreen FAQ.
The Switch releases are digital-only: Nintendo says they will be available in Nintendo eShop and will not receive physical releases.
