Choose Switch 2 for confirmed handheld flexibility
Nintendo’s Canadian listing explicitly identifies TV, tabletop, and handheld play modes. If you want to play away from a television or shift between those modes, Switch 2 is the only platform among the three for which that flexibility is specifically confirmed in the available platform details. Nintendo lists one-player play on a single system; the listing does not establish multiplayer features.
Choose Steam if trying a demo matters most

Choose the console or PC you already use
If you already own a PS5 or a gaming PC and do not need a confirmed platform-specific feature, choosing your existing setup is the practical default. The announcements establish that the game is planned for both, but do not establish which will run better or cost less. There is no supported reason to buy new hardware solely for Waltz and Jam based on the information currently available.
