You can date multiple marriage candidates in Stardew Valley without losing friendship just for giving them bouquets. The main consequences depend on what you do next: dating every bachelor or every bachelorette can trigger a group event, marriage introduces a chance of spousal jealousy, and a Wilted Bouquet ends a dating relationship with a friendship penalty.
What dating multiple villagers does
A marriage candidate’s heart meter stops at eight hearts until you give them a bouquet. The bouquet marks the recipient as your boyfriend or girlfriend and lets you build the relationship to ten hearts. You can give bouquets to multiple eligible candidates; dating several people before proposing does not, by itself, lower their friendship with you.

This is not one general-purpose “cheating penalty.” The group event, a spouse’s possible jealousy, and ending a relationship are separate mechanics with different triggers.
When dating everyone triggers a group event
Dating two or more candidates is not enough to trigger the group scene. You must be unmarried, have given a bouquet to every available bachelor or every available bachelorette, reach ten hearts with each, and see each person’s individual ten-heart event. The bachelorette scene triggers when you enter Haley and Emily’s house; the bachelor scene triggers when you enter the Stardrop Saloon.

If Haley or Alex is the last person whose ten-heart event you see, the group event follows immediately. Plan around that sequence if you want to avoid being caught by the scene.
With a Rabbit’s Foot
Having a Rabbit’s Foot in your inventory changes the scene to a non-angry path: the bachelorettes gossip about Lewis and Marnie, while the bachelors go to the pool. It prevents the negative confrontation, but it does not eliminate the aftermath entirely.
Without a Rabbit’s Foot
The group expresses anger. In either version of the event, the characters give you the cold shoulder for about a week and refuse gifts during that time; they forgive you afterward. The event can occur only once per save file. It is disabled if you are married, have given a Wilted Bouquet to a candidate, or have given a Mermaid’s Pendant to a candidate.
How jealousy works after marriage
After marriage, a spouse may become jealous if you give a non-hated gift to another marriage candidate who previously accepted a bouquet and is the same gender as your spouse. This is a chance, not a guaranteed reaction. Birthday gifts are safe. The detailed conditions documented for spouses should not be assumed to apply identically to every fiancé or roommate.

How to end a dating relationship
Give the candidate a Wilted Bouquet to end the dating relationship. You make one by placing a bouquet and one coal in a furnace. The recipient’s friendship immediately drops to five hearts, though you can rebuild it afterward.

For a marriage proposal, the intended candidate needs ten hearts; you must have given them a bouquet at eight hearts, upgraded your farmhouse, and gained access to the Tide Pool area of the Beach. You then propose with a Mermaid’s Pendant. Mayor Lewis’s in-game letter, reproduced on the Stardew Valley Wiki’s Marriage page, explains: “If there comes a day that you want to ask for someone’s hand in marriage, you’ll need to give them a ‘Mermaid’s Pendant’.” Giving a Mermaid’s Pendant to a candidate also disables the group event.

The game presents bouquets as the marker of romantic interest: Pierre’s in-game letter, also reproduced on that wiki page, says, “If you want to show someone that you’re romantically interested, you’ve got to give them one of my beautiful flower bouquets.” The official Stardew Valley website describes 12 dateable townsfolk among the residents you can befriend.
