Take legendary pelts, hides, and skins to the Trapper. Take other legendary animal parts—such as teeth, claws, and horns—to a Fence for crafting. If you have a whole legendary carcass, the Trapper is the supported place to sell it.

What to do with a legendary pelt
Skin the legendary animal, then bring its pelt to the Trapper. The pelt is the material used for the Trapper’s special clothing recipes; it is not a Fence crafting item. GameWith’s guide, last updated October 4, 2019, describes this Trapper role.

What to do with the other legendary parts
Take components such as teeth, claws, and horns to a Fence when you want to craft talismans or related items. In other words, choose the vendor by the material and the item you want: Trapper for pelt-based clothing, Fence for crafts made from other parts.
Can you sell a legendary carcass?
Yes. SuperCheats’ guide, added January 13, 2019, says legendary carcasses can be sold to Trappers. It also notes that some large or heavy animals cannot be loaded on a horse, so the option to sell a carcass does not mean every carcass can be transported that way. The cited guidance does not establish a butcher or Pearson as a destination for legendary carcasses.

What if you lose the legendary pelt?
If you skinned the legendary animal and then lost the pelt, it is registered with the Trapper, where the associated clothing remains available. SuperCheats says the trade-off is losing the money you would have received by selling the pelt yourself. This reassurance applies to a collected, skinned pelt; it does not mean the cash sale is preserved.
How many legendary animals are there?
PowerPyx’s 2018 Red Dead Redemption 2 guide lists 16 legendary animal locations and notes that their unique pelts can be used to craft special clothing at Trappers. That figure refers to the guide’s locations, not a count of animals in every game mode.
