Take the Legendary Buck carcass to a Trapper in Red Dead Redemption 2. Rockstar confirms that a Trapper can buy some Legendary Animal carcasses, and a Legendary Buck guide names the Trapper as the buyer.
Where to take the Legendary Buck carcass
Sell it to a Trapper. Rockstar Games Support says Legendary Animals can be skinned to sell their pelts or, in some cases, their carcasses to a Trapper: Rockstar’s guidance on Legendary Animal materials. A Legendary Buck hunting guide also identifies the Trapper as the carcass buyer.

What the carcass is worth
RDR2.org’s 2018 guide reports an in-game sale value of $31 for the Legendary Buck carcass. That is the guide’s reported value, not an amount confirmed by Rockstar Support.
What happens if you lose the carcass
If the Legendary Animal was defeated but you cannot skin it or lose its materials, Rockstar says the defeat is recorded by the Trapper and the materials needed for crafting will be available there. Its support guidance does not promise cash for a lost carcass.

Why the Trapper matters beyond the sale
The Trapper also turns animal materials into crafted gear, including outfits and hats, as described in GameSpot’s Trapper guide. The Legendary Buck carcass therefore belongs at the Trapper rather than being treated as an ordinary carcass sale.
