What the Fighting Dojo offers
The Fighting Dojo is in Saffron City, next to the official Saffron Gym. In the core-series games where it appears, you battle through the dojo and then receive a choice between Hitmonlee and Hitmonchan. According to the Bulbapedia entry on the dojo, the dojo appears in Generations I, III, and VII, and both Pokémon are level 30 in the games noted there (Bulbapedia, Fighting Dojo / Pokémon Dojo). The Bulbapedia page does not state a publication year, so treat its level data as current only as far as the page itself is maintained.
Hitmonlee
Hitmonlee is one of the two fighting-type Pokémon you can take from the dojo. Its species profile is available in The Pokémon Company’s Pokédex, and the Philippine portal’s Hitmonchan entry is one of the official species pages for the pair (Hitmonchan, Pokédex, The Pokémon Company Philippines). The choice is about which of the two you want on your team.
Hitmonchan
Hitmonchan is the other option. It has its own official Pokédex entry, linked above. Like Hitmonlee, it is offered at level 30 in the games noted by Bulbapedia.

Which one to pick
The guides cited here do not name a winner. Your decision should follow from one of three situations.
If you have a team plan for one of them
If you already know the role you want the Pokémon to fill, pick the one that fits that role. The sources do not compare the two Pokémon’s stats, moves, or competitive value across games, so the best guide is your own build. If you are assembling a team around a particular plan, check that plan against the exact game you are playing before committing.

If you like one of them more
If you have a clear preference for one Pokémon’s design or your team’s personality, choose it. A reward you enjoy using is a reasonable outcome when no team requirement applies.
If you are indifferent
If neither option appeals to you more, there is no evidence in these sources for a universally correct answer. Either choice is valid, and you can pick at random without losing a meaningful advantage.

Pokémon: Let’s Go, Pikachu! and Let’s Go, Eevee!
A Nintendo Insider guide covering the Let’s Go games confirms that, after you beat the dojo master, you can choose either Hitmonlee or Hitmonchan. The guide treats the choice as preference-dependent and does not declare a decisive winner (Nintendo Insider, Pokémon Let’s Go Hitmonlee or Hitmonchan in the Fighting Dojo). The same logic applies here: pick the Pokémon that suits your plans or your taste.
Checking your game before you choose
The dojo appears in more than one generation, and the available evidence does not establish a complete, version-by-version comparison. Before you commit, confirm the following for your copy:

- Which game you are playing, since the dojo’s reward and its surrounding mechanics are described per generation.
- Whether the level noted for both options (level 30) matches the version you have, as Bulbapedia lists it for the games it covers.
- Whether the team plan you have in mind depends on moves or stats that vary between games.
What the sources do and do not establish
The available sources establish three things: the two options are Hitmonlee and Hitmonchan, both are offered at level 30 in the games Bulbapedia notes, and the Let’s Go guide treats the decision as a matter of preference. They do not establish a cross-generation strength ranking, a move-by-move comparison, or any statement about which option is most useful in competitive play. Any article claiming otherwise would be going beyond its evidence.

Choose Hitmonlee if you want its role or simply prefer it. Choose Hitmonchan if the reverse is true. If you have no preference and no team plan, either option is an acceptable reward.
