In ordinary Survival enchanting, you can’t put Infinity on a crossbow: Infinity is eligible for bows, while crossbows have their own enchantments. Java Edition has a modification-based exception, but it is not part of normal Survival enchanting.
Why can’t Infinity be applied to a crossbow in Survival?
Minecraft assigns enchantments to eligible item slots. Microsoft’s Bedrock Creator reference lists Infinity for bows, not crossbows; it lists Multishot, Piercing, and Quick Charge for crossbows. Its general explanation is that “In Survival mode, enchantments can be added to certain items that are equipped to certain slots.” Microsoft Learn’s enchantment reference describes Infinity as preventing normal arrows from being consumed when fired.
Mojang’s bug tracker likewise says bow enchantments cannot be applied to crossbows in Java Survival and that this behavior is intended. That report concerns Java snapshot 18w43a, so it confirms the intended Survival restriction but is not a current-version changelog. The documented Survival item for Infinity’s normal-arrow effect is the bow.
Can Infinity work on a crossbow with commands or modifications?
Java Edition’s 1.20.5 release notes document an exception for modified items: projectile-weapon enchantments such as Infinity can work on the alternate weapon when added through data manipulation or a change to enchantable tags. That is different from applying the enchantment through ordinary Survival methods. Read Mojang’s Java Edition 1.20.5 release notes.

This exception is specifically documented for Java Edition. The cited Bedrock reference establishes its Survival eligibility list; it does not establish that the Java modification behavior works the same way in Bedrock.

The official sources establish which items can receive Infinity in ordinary Survival and describe the Java modification exception, but they do not give a design reason for the restriction. A balance explanation may sound plausible, but it is not confirmed by these sources.
