The three Story Mode weapons can be collected from a Gunsmith after completing Chapter 1, according to Rockstar Support.

What is not guaranteed with a current Ultimate Edition purchase
Historical pre-order rewards
Rockstar’s 2018 announcement described a War Horse and Outlaw Survival Kit for pre-orders, along with other rewards dependent on platform and timing. Rockstar Support clarified that digital GTA$ bonuses were exclusive to digital pre-orders and that the digital-exclusive treasure map applied only to qualifying digital pre-orders placed before August 15, 2018. These were historical promotions, not guaranteed Ultimate Edition contents for a current purchase. The announcement’s PC pre-purchase promotions were also time-limited launch offers, not ongoing edition inclusions. See Rockstar Support’s pre-order details.
The Collector’s Box
The Collector’s Box is a separate physical product, and Rockstar’s announcement explicitly says “Red Dead Redemption 2 sold separately.” Its listed objects include a metal tithing box with lock and key, challenge coin, double-sided puzzle, bandana, treasure map, pin set, playing cards, Wheeler, Rawson and Co. catalogue, and twelve cigarette cards. Those collectibles are not bundled as Ultimate Edition game content.

Platform, installation, and account caveats
Check the exact platform and format on the listing you plan to buy. Rockstar’s store presents platform-specific edition comparisons, including PlayStation 4 and Rockstar Games Launcher listings. Storefront displays can differ.
On PlayStation 4, the installed game may appear as Special Edition even if you purchased Ultimate Edition; Rockstar says the Ultimate Edition’s online bonuses are associated with the player profile. Rockstar also says game sharing allows access to Story Mode content, while Ultimate Edition or pre-order online bonus content is restricted to the primary account. See Rockstar Support’s explanation.
