You drop the Geo you were carrying, but you can get it back: after death, a Shade holds it. Find and defeat the Shade to recover the Geo. If you die again before doing so, the old Shade disappears and its Geo is lost.
What happens to your Geo when you die?
Your carried Geo is held by the Shade created from that death. Team Cherry describes the Shade as “a spectral remnant of the Knight’s previous death, carrying all of it’s lost geo and some of its strength” in its October Update: The Mystic Jiji! Defeating the Shade returns the Geo and restores your normal SOUL meter. The Hollow Knight Wiki documents the recovery behavior and related edge cases.
What if you die again before reaching the Shade?
The new death replaces the previous Shade. The Geo held by the old Shade is lost, and the replacement Shade carries the Geo from your latest death. So the first death does not automatically erase your Geo, but another death before recovery can cost the earlier amount.
How can you recover a hard-to-reach Shade?
If getting to the Shade is difficult, the wiki notes that a spell can draw its attention from a distance. It also lists Confessor Jiji as a way to summon the Shade in certain circumstances. These are situational options, not a guarantee that every recovery problem works the same way.

What if no Shade appears?
The wiki describes a rare bug involving environmental deaths in which the Shade may not appear. It also notes Jiji as a way to summon it. This is an exception, not the normal result of dying.
